Moskito Island is seeking to hire a Head Chef.
Key Objectives:
This includes but is not limited to:
- Ensuring all the food served to our guests/homeowners is of an extremely high standard and in keeping with their tastes and requests.
- Managing the kitchen in a harmonious and positive manner which allows all members of the team to flourish.
- Ensuring that we manage costs of the food and staffing appropriately.
- Ensuring the kitchen team is motivated and appropriately managed to achieve the quality which is expected of our homeowners/guests.
- The sourcing of premium quality produce which adheres to a menu specific cost control structure which has been agreed to by you and the Operations/Estate Manager.
- Ensure duties are carried on Moskito and any assigned location in the BVI in relation to the business as per the Rota assigned which may include evening schedules.
- Assist other departments on the estate when required with daily duties.
Detailed Responsibilities:
Food
- An exemplary level of food standards exceeding the requests, needs and expectations of our guests.
- Prepare Breakfast, lunch, dinner and bar snacks and any other meal request to the satisfaction of the guests and Managers.
- Prepare and deliver meals to any requested location on the island including the beaches, various houses and terraces.
- Coordinate with the Estate Manager for guest requirements and the fact file is consulted within a sufficient time frame to utilize the ordering system to its maximum potential.
- Work closely with the Operations/Estate Manager to create experiences where food and beverage services complement each other harmoniously enhancing flavors.
- Look into innovative ways to develop more sustainable ways of operating taking advantage of products available in the BVI.
Costs
- Manage the food cost within the set budgets. To include:
- Working alongside our food purchasing processes
- Preparing comprehensive menu cards with clear and accurate costing
- Wastage sheets
- Clear planning of ordering and delivery processes
- Tight management of storerooms
- Management of buffet stations to ensure cost is properly managed.
- Monitor stock levels at all times and ensure that stock areas and fridges are kept locked when possible and the necessary controls are in place.
- Ensure the highest quality of food is purchased and delivered within the costing structure.
- Responsible for overseeing all food deliveries together with the Procurement Team and unpacking to ensure that deliveries are properly stored.
- Proactive waste management, promoting ‘no wastage’ menu planning and supporting the recycling system.
Service
- Work with the food delivery teams to ensure everybody understands and is clear on the intended service standard.
- Design and customize menu plans which work with each location and guests/homeowners.
- Be an active part of service briefings for the front of house teams’ knowledge.
- Responsible for ordering food supplies, utensils, crockery and appliances as well as maintaining stock controls and avoiding wastage.
- Review guest feedback reports and look at ways of improving systems/service delivery.
Health and Safety
- Maintain the highest level of hygiene as per the standards of the BVI health department in and outside of the kitchen, the staff that work in the kitchen and the appliances that are used. Use a training plan to achieve transparency and standards for hygiene.
- Assist Management to ensure that all health & safety requirements are met and that working practices are monitored for safety.
Team Management
- Manage the team in a positive manner which encourages a happy team and allows people to grow.
- Follow Moskito Island management of people policies (such as regular appraisal reviews; monthly departmental meetings; daily coaching; fair and honest approach; promote communication in the form of feedback or new ideas/suggestions from the team).
- Responsible for training kitchen staff to ensure flexibility of the workforce and to develop individuals.
- Manage the team in a fair and responsible way and maintain the discipline and performance of the team.
- Responsible for appropriate instruction and guidance to the Sous Chef in your absence, when on vacation or days off etc.
- Your uniform and appearance must at all times be clean and presentable. Moskito Island will be responsible for replacing your uniform and footwear when necessary.
- Report any unacceptable behavior from kitchen staff to the Managers to ensure that the proper measures are taken. Have understanding of company disciplinary procedures, and ability to carry out if necessary.
- Responsible for producing the kitchen teams schedule on a weekly basis and submitting to the management team on time each week. Including the input of the schedule onto time and attendance system if required.
- Monitor kitchen teams hours on the time and attendance system and amend where needed to ensure accurate payroll costs are submitted.
Other
- Report to the Managers and liaise with them with regards to menus and any staff issues that may arise.
- You will be required to attend and pass a BVI Food Handlers Course on arrival in the BVI.
- You will be required to pass the BVI drivers license test within your probation period, in order to be able to legally drive on island.
- Ensure that all control procedures are followed and enforced, and that all statutory requirements are understood and followed.
- Assist with moving any items whenever needed as may be requested.
- Abide and follow all company policies and procedures and ensure all statutory requirements are understood and followed.
- Respond to emergencies including fire and accident as outlined in training sessions and departmental procedures.
- Assist the Islands operations in preparation for Hurricanes.
- Have a clear working knowledge of the Islands policies and operate within them at all times to ensure staff awareness of relevant policies.
- Attend meetings as required and to support the communication process both on and off Island.
- Co-operate with other departments, management and all business partners to ensure a harmonious working and living atmosphere.
- Ensure all work equipment is functional and used in accordance with manufactures and safety guidelines. To report any malfunctions of equipment to your direct report and in absence to management.
- Be hands and actively engaged in helping the overall islands operations in a general capacity and willing to assist other departments on both islands and any other designated location in the BVI as whenever required and requested.
- When off island, to behave in appropriate manner as a representative of the company.
- When working on Island to ensure you observe high levels of confidentiality, integrity and professionalism.
- Be well groomed and representable in uniform (provided by the company) when on duty.
- Be willing to allow flexibility to work such as extended hours when needed including the weekends and public holidays.
